I know you’re busy. So am I. So are most of us. Whether we have children living at home, work at a full-time job outside the home, (or work a full-time job inside the home), care for elderly parents, or do all of these things, we must find some time to take care of ourselves. Think about it. If you don’t take care of yourself, and you get sick, or just aren’t at your best, you can’t take care of the other people in your life properly, or do your job as well as you could.
Eating a healthy diet consistently doesn’t really have to take much more time than picking up fast food on the way home from work. If you think about it, taking the time to go by a fast food drive-through takes most of us about twenty extra minutes. Can you fix a great meal in 20 minutes? Maybe not. But you can in 30 minutes, if you’ve planned just a little bit ahead of time.
What has been the most helpful to me has been to plan out my meals for the upcoming week. I used to do this on a scrap piece of paper, but have started doing it on the computer. I don’t use any special program, I just open up my word processing program. I start by just listing some dishes and meal ideas, then go from there. For example, my list might end up looking something like this:
spaghetti, meat sauce, salad, something for dessert (2 nights); salmon filets, brown rice, broccoli, dessert; pinto beans, cornbread, salad, dessert (2 nights)
Very simple meals. Not complicated, and actually pretty quick. You just have to do some things ahead of time.
I like to do some cooking ahead of time on the weekend. Meat sauce for spaghetti meals, pinto beans, different desserts–these can be cooked up ahead of time and frozen and will be quick to heat up during the work week. I love to cook a big pot of pinto beans, blackeyed peas, chili, spaghetti sauce, pie, jello salad, banana nut bread–foods like this–on Saturday or Sunday with the football games on the television. It doesn’t really take that much time. Once you have the sauce simmering, or the beans going, you go and do other things. Then, when they’re done, just freeze them in containers that hold enough for one or two meals.
Later in the week, they will thaw in the saucepan in about the same amount of time that your spaghetti cooks, or your cornbread bakes. It takes about 20 minutes for a pan of cornbread to bake, and that’s about the same amount of time it would have taken you to run by that hamburger joint.
